California] Veteran registered dietitian, Helene Berk, M.Ed., R.D.
launches her "CONSCIOUS CUISINE CAMPAIGN"
on Healthy People
Radio premiering today, on the Z
Talk Radio network, broadcasting out of Vancouver, Canada. The health pro's show
also streams through the internet. At one point, Berk produced and hosted her own television
show in Akron, Ohio and then moved to producing
and hosting radio in Cleveland.
Berk put her show on hiatus when she moved to Southern
California. Today, Healthy People Radio returns to the
airwaves. The only
difference, is listeners have the option to communicate with the dietitian and other listeners
via the Z Talk Radio chat room.

18, 2010. One main reoccurring theme will be "conscious cuisine".
Host, Registered Dietitian,
Helene Berk, M.Ed., R.D. has been on a mission to
launch a Conscious Cuisine Campaign to raise awareness of food ingredients and
effects on health and vitality.
Berk says, "The first thing to do, to become conscious of your
cuisine, is to check ingredient lists".
Here are
some of the ingredients you WILL NOT find in Conscious Cuisine, as
highlighted on Healthy
People Radio
Conscious cuisine is free
of:
- NON-GMO INGREDIENTS!!!!
- synthetic ingredients, including colors and
preservatives
- synthetic sweeteners
- corn syrup / high-fructose corn syrup
[YES, IT REALLY IS THAT BAD
FOR YOU]
- bleached
over-processed sugars, including "brown sugar"
- trans fats [i.e., look for hydrogenated & partially hydrogenated
oils]

refined, enriched and bleached flours
- hormones
- antibiotics
- MSG
When it comes to nutrient-density, it is all
relative. These days, it is simple to find "Conscious" Oreo-style
cookies. The thing to keep in mind, is the "natural cookie" may
contain unbleached
sugars, yet may contain refined oils exposed to high temperatures which have destroyed its therapeutic
properties. The natural cookie might be low in
plant fibers even though the flour is unbleached and pesticide-free.
Nevertheless, the
conscious cookie will be dramatically more nutrient-dense than its mainstream
version. While the conscious version may not be therapeutic it will have
a greater spectrum of available vitamins, minerals and phytonutrition. Plus, you will feel better after having ingested them, in
the appropriate dose.
WATCH THE GLYCEMIC, REFINED
CARBOHYDRATES!
Berk explains, the word "conscious" in the context of
cuisine, indicates ingredients are not, in of themselves, toxic. However, in
large doses, even conscious cuisine can become toxic. As previously mentioned,
conscious cuisine, at times may contain high amounts of glycemic natural sugars,
like dehydrated cane juice, honey, maple syrup, fruit syrups, dates and raisins.
These nutrient-dense sweetening agents rapidly raise blood sugars just as fast
as their refined counterparts. That's naughty news for diabetics, heart
patients, cancer patients or those suffering from inflammatory conditions aggravated
by lifestyle.
*REMEMBER: excessive sugars are (1) stored as blood fats
and (2) aggravate inflammation
Over-consumption of sugars and starches
can have a toxic effect. Excess carbohydrates are stored as triglycerides
(blood fats), so overdosing on them aggravates heart disease. This is why
diabetics often develop cardiovascular disease. Over-dosing on sugars
and starches also triggers generalized inflammation. Hemoglobin A1C is a test
that diabetics and pre-diabetics take to measure inflammation in the system. The
goal is to keep your results under 7%. Berk warns, "watch the dose when it comes to
carbohydrates ...even if the cuisine is made with conscious ingredients".
THAT SUGAR BUZZ
Another fact the dietitian encourages her
listeners to remember, is munching wildly on sugars and starches in response
to stress or boredom numbs the senses. To remain alert and "conscious"
throughout the day, she specifies that one must eat protein and watch the dose of
carbohydrate ingested at a meal or snack. Carbohydrates trigger the release
of serotonin into the mix for a mind-numbing experience. REMEMBER: More sugar
and starch translates into more serotonin being released. Even though you can
"get fat" over-eating conscious cuisine, at least conscious sugars and starches
have been spared the bleaching process, and contribute more vitamins, minerals and anti-oxidants to
the body's bank
account, instead of robbing it!
THE BALANCING ACT
Berk reminds her listeners, it is crucial to balance carbohydrates with
protein to slow down the speed at which sugars
and starches enter the bloodstream. Balancing the right dose of protein with
carbohydrate will stabilize blood sugars for 3-5 hours. So, eat that conscious cookie with
some soy milk or organic cow's milk to provide enough protein to
slowly digest that carbohydrate-loaded treat and stabilize blood sugars for at
least a few hours!!
