Killers in the Kitchen.
Yes, killers are lurking in your kitchen.
The good news is, it is simple to spot them.  

May 18, 2010 - [Southern California]  Veteran registered dietitian, Helene Berk, M.Ed., R.D. raises awareness of "Killers in the Kitchen" on Healthy People Radio premiering today, on the Z Talk Radio network, broadcasting out of Vancouver, Canada. The health pro's show also streams through the internet. At one point, Berk produced and hosted her own television show in Akron, Ohio and then moved to producing and hosting radio in Cleveland. Berk put her show on hiatus when she moved to Southern California. Today, Healthy People Radio returns to the airwaves. The only difference, is listeners have the option to communicate with the dietitian and other listeners via the Z Talk Radio chat room. Here are some of the KILLERS highlighted on an ongoing basis by veteran dietitian, Helene Berk on Healthy People Radio


Toxic Fats

The dietitian reveals how commercially refined cooking oils, like corn, vegetable and even canola oils, over-flow with "free radicals", aggravating inflammation. These over-processed, refined oils are heated at extremely high temperatures, creating cancer-causing peroxides. In addition, clear bottles of oil allow light to further degrade these oils, generating even more free radicals. Berk also explains how plastic containers seep plastic molecules into refined oils, to add insult to injury.

In the same vein, hydrogenated oils, like those found in stick margarine, act like super-glue to solidify the cardiovascular system! Grab a package of cookies or crackers. Unless it states hydrogenated or partially-hydrogenated ingredients are strictly avoided, you can bet you are crunching on these toxic substances right about now. 

Toxic Carbohydrates

Berk continually reminds her listeners bleached, "boraxed", brightened white sugars and white flours, trigger just as many problems as toxic fats. Overdoing sugars and starches -- especially the refined versions, creates an acidic condition in your body, leading to more inflammation.  Processed carbohydrates create a high glycemic load on the bloodstream. That means the bloodstream has way too much sugar. This condition is known as hyperglycemia, and is a trigger for conditions, like inflammation, cardiovascular disease and diabetes.

Berk also reminds her listeners that over-eating sugar, starch or any over-processed glycemic carbohydrate causes:

  • brain fogginess and sleepiness

  • elevation of blood fats. (a.k.a., "triglycerides")

  • compromised immunity 

  • hormonal imbalances due to a deficiency of plant fibers

  • hormonal imbalances from environmental additives:
    pesticides, fungicides
    and herbicides

Toxic Proteins
This dietitian is dedicated to organics. Berk gets into gory details with her discussions. Have you eaten, yet? Let's chat a bit about sources of protein. She raises awareness of how hormone, antibiotic-injected meat, poultry and dairy products expose one's immune system to low-doses of hormones and antibiotics over decades. Exposure to low-dose antibiotics may lower responsiveness to antibiotics administered by doctors. Berk encourages listeners to examine labels and search for grass-fed beef, free range chicken and eggs; She suggests including more cold-water wild fish rather than farmed fish. Berk reminds her listeners Wild Alaskan Salmon are well exercised, higher in omega-3 fatty acids and avoid chronic exposure to pesticides and antibiotics stored in fat cells. Larger mercury-rich fish, like shark, swordfish, king mackerel and tuna, must be eaten in moderation. The larger the fish, the higher the mercury content is likely to be. So, if you are seeking an omega-3 rich source of fish, Berk suggests you experiment with smaller fish, like sardines in olive oil, herring, and sticking with salmon.

Toxic cooking utensils

Much has been written about plastics in the environment entering our collective systems and destabilizing the endocrine system. Ingesting molecules of plastic can throw hormones out of whack, aggravating inflammation. Beware of the plastic spatula to flip the pancakes! It  might melt into your meal! And, watch that plastic wrap on the micro waved dish! Prevent it from touching your food when it heats up. One more thing about plastics: cloudy (opaque) water or juice containers seep more plastic molecules into the fluid they contain, than the clear plastic containers. 

Re: TEFLON. This is a political situation. Teflon "people" in black coats and shades are lurking everywhere... ready to pounce on anyone who speaks out against it... kind of like those Monsanto folks. One scratch and TEFLON becomes toxic.  It kills birds when heated, so what will it do to you? Pay attention! Berk suggests avoiding TEFLON, and reminds us: The enemy is everywhere!  Those killers are lurking in the cupboards!

Now your awareness has been raised. Keep an eye out for hydrogenated and refined oils, bleached sugars and starches. Select expeller-pressed or cold pressed oils and Helene always reminds us, be sure to transfer the oil into dark bottles. Choose organic products as often as possible.
