highlights "Therapeutic Cuisine" on Healthy People Radio
premiering today, on the Z
Talk Radio network, broadcasting out of Vancouver, Canada. The health pro's show
also will stream through the internet. At one point, Berk produced and hosted her own television
show in Akron, Ohio and then moved to producing and hosting radio in Cleveland.
The dietitian put her show on hiatus when she moved to Southern
California. Today, she brings Healthy People Radio back to the airwaves.

listeners with medical nutrition therapy "on the air" and provides
suggestions for therapeutic cuisine to:
manage blood pressures
stabilize blood sugars
reduce blood fats (triglycerides)
balance hormones, naturally, with phytoestrogens and plant fibers.
manage inflammation with omega 3's and greens.
improve moods with therapeutic fats
and nutrient dense, low-glycemic carbohydrates
As a registered dietitian practicing
Medical Nutrition Therapy, Berk feels the need to coin the term,
"Therapeutic Cuisine" and to organize a "CONSCIOUS CUISINE"
Campaign via her on-line radio show. Berk says, "conscious cuisine is not
necessarily therapeutic. But, therapeutic cuisine is always conscious."
Therapeutic Cuisine refers to foods which heal, creates balance [i.e.,
homeostasis] and hormonal harmony. The dietitian also refers to "Rx
Cuisine" or "Therapeutic Cuisine" as "Cream of the Crop
Cuisine".
The health pro explicitly states both
conscious and therapeutic cuisine avoid synthetic colors, hormones, antibiotics, MSG or
preservatives, synthetic sweeteners, corn syrup,
high-fructose corn syrup, bleached sugars, enriched flours, and trans fats
such as hydrogenated fats and partially hydrogenated oils. Here's the main difference
Berk notes between
conscious and therapeutic cuisine: Rx cuisine goes the
extra mile to assist in creating homeostasis. Each ingredient is uniquely therapeutic in its
own right. The Rx Cuisine may be super nutrient-dense ...or protein-rich to build lean mass ...or may
be a therapeutic omega 3 oil to help manage inflammation or depression. The therapeutic food, beverage,
tonic, spice or herb may assist in healing by nourishing cells or
ridding the body
of toxins. Some therapeutic ingredients help manage blood sugars like dark
chocolate or cinnamon. Or, the therapeutic cuisine may be inherently low glycemic, to manage the
speed at which sugars enter the bloodstream, as it is with steel cut oats or
apples.
Here are some main criteria Helene Berk, M.Ed., R.D. has established to be
included into her esteemed category of "THERAPEUTIC" Conscious
Cuisine:
Therapeutic [Rx] cuisine contains moderate amounts of
sugars ... one teaspoon (4 grams) "per serving" [serving
sizes listed on labels]
Rx cuisine avoids using refined fats, like
refined canola oil, which is a poly-unsaturated oil exposed to high
temperatures.
Heat treated oils are loaded
with free radicals triggering low-grade inflammation, and are often
contained in clear, plastic containers.
Rx oils are "cold pressed",
"unrefined", and stored in a cool place, in tinted bottles
since exposure
to light degrades oil, creating inflammation-forming free radicals.
Rx cuisine with nuts/seeds are raw, not
roasted. Roasting destroys therapeutic properties.
RAW nuts and RAW seeds contain therapeutic essential oils. Store them in the refrigerator to retain their
phyto-fat nutrient
density.
Rx Cuisine avoids using carrageenan,
which, according to Andrew Weil, M.D.*,
an integrative medical pioneer,
"causes low-grade inflammation".
Products containing
chocolate are NEVER treated with alkali [i.e.,"Dutching"],
which is a process that destroys chocolate's
inherent therapeutic properties.
Rx cuisine may contain fibers assisting in
balancing hormones naturally.
Plant fibers also clean the digestive tract to "soak up"
free-floating blood sugars and blood fats.
Rx cuisine is "clean": non-GMO
and spared
exposure to herbicides, fungicides and pesticides which acidify your
system.
Some ingredients may be transitional in nature. The farmers have stopped using toxic chemicals,
and are transitioning
towards organic.
Berk says, "As you eat to nourish on a cellular level, you
become leaner, healthier and energized. I call it a METABOLIC MAKEOVER!".
The medical nutrition therapist wrote a book called, Metabolic Makeover in the 90's and plans on
releasing the 4th Edition in 2012. Berk advises,
"When munching on healing cuisine,
be sure it contains dramatically less dehydrated cane juice or carbohydrates per
serving; especially if you
suffer from diabetes, metabolic syndrome,
cardiovascular diseases, hypertension, hormonal imbalances, eating disorders, or
inflammation."
The dietitian's mission is to
remind her listeners food truly is
medicinal. She advises everyone to relax, and quiet the mind
and listen to the messages your body is sending you. Your body does talk to you.
And, it knows
exactly what it needs.
